Final Decisions

Last night my mom and I finalized our menu.  For hors d’oeuvres we’re serving stuffed mushrooms and spinach balls, both are favorites that we’ve had a few times in the past.  For the soup it’s butternut squash, wild rice, and smoked sausage soup.  As a salad we’re doing an Italian antipasto with marinated artichokes and mushrooms, roasted red peppers, and mozzarella on a bed of romaine and spinach with a balsamic vinaigrette.  Like I said before beef tenderloin is the main dish accompanied with succotash and red wine risotto with peas.  And lastly for desserts I decided to make coconut macaroons (my mom’s favorite), peanut butter and jelly bars (my brother’s choice), and chocolate molten lava cake with ice cream on top.  I can’t wait to start cooking!  We decided to make it more manageable by dividing it into two half days starting on Sunday.  I’ll keep you updated with our progress and final product!
