Due to special request…
Red Velvet Cake
1 cup butter (2 sticks)
2 cups sugar
3 beaten eggs
1 T. cocoa
1 T. vinegar
½ t. salt
1½ t. baking soda
2 ½ cups flour, sifted
1 cup buttermilk
1 t. vanilla
2 oz. Red food coloring
Cream butter and sugar. Add eggs, and beat until fluffy. Make a paste of cocoa and vinegar and add to butter mixture. Sift salt, baking soda, and flour together. Add dry mixture in thirds, alternating with milk. Do not over mix. Add vanilla and food coloring. Grease and flour 3, 9inch layer pans. Bake at 350º for 25-30 minutes or until done.
Icing
1 cup whole milk
2 T. flour
1 cup butter
½ cup walnuts
1 cup sugar
1 cup coconut
½ chopped pecans
Cook milk and flour to thicken, do not boil milk, set aside to cool. Mix butter and sugar and once milk mixture is cooled add together. Beat until it’s the consistency of whipped cream. Fold in nuts and coconut.
